Spicy Carrot
Rice
Makes: 2
Servings
Ingredients:
2 Cups Basmati Rice
4 1/2 Cups Water
1 1/4 Cups Carrots - Grated
2 Purple Onions - Diced
5 Teaspoons Cinnamon
5 Cloves - Crushed
9 Chillies - Diced
Cilantro (desired amount)
2 Tablespoons Vegetable Oil
Salt (desired amount)
Directions:
1) Cook rice in water.
2) Add chillies, onions, cinnamon, cloves, grated carrot,
salt, and oil to a frying pan & and fry until cooked.
3) Add the cooked rice to the frying pan.
4) Garnish with desired amount of cilantro.
5) Serve!

Rice Roti
Makes: 2 Servings
Ingredients:
2 Cups Rice Flour
2 Cups Water
1 Tablespoon Butter
Pinch of Salt
Directions:
1) Boil water & add salt.
2) Add rice flour to boiling water & stir.
3) Once flour forms soft dough, allow it to cool and then
remove it and form balls with it.
4) Roll balls on a floured board.
5) Add butter to outside of balls.
6) Bake in oven until golden brown.

Rice Pilaf
Makes: 4-5 Servings
3 1/2 Cups Brown Rice
2/3 Lb Mushrooms - Chopped
6 Cups Water
1 Green Pepper - Chopped
1 Purple Onion - Diced
3 Plum Tomatoes - Diced
1 Red/Yellow Pepper - Chopped
Salt & Pepper (if desired)
Directions:
1. Boil water.
2. Add ingredients.
3. Cover & simmer.
4. Add more water if needed.
5. Serve when rice is cooked & vegetables are soft.

Red Beans and Rice
Makes: 3+ Servings
Ingredients:
3-4 Cups Water
2 Cans Red Kidney Beans
3 Stalk Celery - Chopped
4 Bay Leaves
3 Tablespoons Garlic - Chopped
2 Small Yellow Onions - Chopped
3 Tablespoons Chopped Barley
1 Green Pepper - Chopped
2 Tablespoons Dried Thyme - Chopped
1 Teaspoon Black Pepper
1 Teaspoons Salt
Directions:
1. Allow beans to soak overnight.
2. Drain beans in the morning & add to water, onions, bay
leaves, and celery.
3. Boil water.
4. Reduce heat, cover & simmer for hours.
5. Stir occasionally.
6. Mix in remaining ingredients and spices.
7. Finish cooking with cover on.
8. Remove bay leaves.
9. Serve!

Acapulco Rice
Makes: 2 Servings
Ingredients:
1/3 Cup Water
1/4 Cup Tortilla Chips - Broken
1 Cup Rice
1/3 Cup Cheddar Cheese - Shredded
2 Teaspoons Chili Powder
8 Oz Tomato Sauce
Directions:
1. Combine water, chili powder, and tomato
sauce
in a pan & boil.
2. Add rice & steam w/ lid on for 7-12 minutes.
3. Add cheese & mix thoroughly.
4. Add broken tortilla chips.
5. Serve!
